Ingredients:
- Quinoa (uncooked) – 2 tbsp (21 gm)
- Yellow Moong Dal – 2 tbsp (25 gms)
- Mix veggies (Capsicum, Carrot, Cabbage & other low GL veggies – excluding onion) 1 cup (300 gms)
- Ghee 1-2 tsp
- Curd – 2 tbsp (optional)
- Mustard Seeds, Green Chilly & Curry Leaves for Tadka (Optional)
Method:
- Rinse Properly and Soak Quinoa & Moong Dal overnight or for 4 hrs minimum
- Grind with 1/2 cup water
- Add curd & finely chopped veggies. Also add Tadka.
- Leave covered with 15-20 minutes (if you are adding curd)
- Spread on Hot tawa , apply ghee
- Serve hot with coconut chutney
