Cheesecake is a sweet dessert consisting of one or more layers. The main, and thickest, layer consists of a mixture of soft, fresh cheese, and sugar. The bottom layer or crust or base is made from crushed cookies, graham crackers, pastry, or sponge cake.
Unlike a normal cheesecake, this Cheesecake is a special one & best for Diabetic People. It is made up of Oats-Almonds Crust without any cream cheese & sugar.
Ingredients:
For base/crust
1. Oats -1 cup
2. Almonds -1/2 cup
3. Melted butter(Salted) -2 tbsp
For the middle/creamy layer
4. Hung curd- 1 cup
5. Cottage Cheese (Paneer) – 1/2 cup
For top layer
6. Pulp of one large mango
7. Pistachios for garnishing
8. Cardamom powder (optional)
9. Sugar/milkmaid (optional)
Process:
1. Dry roast almonds and oats and coarsely grind.
2. Mix butter gradually
3. Layer the tart plate or your dish with silver foil
4. Evenly spread the mixture in it and press it hard.
5. Refrigerate for 15-20 minutes
6. Meanwhile prepare the cheese layer by mixing hung curd, cottage cheese, and cardamom powder.
7. Spread it evenly on the crust
8. Freeze it for 1-2 hours
9. Cook mango pulp on the flame for some time till it thickens, with or without sugar
10. Spread it on the cheesy layer and garnish it with Mango cubes and pistachios.
11. Refrigerate (not freeze) again for 4-5 hours
12. Garnish with Mangoes or pistachios, cut and enjoy.
