This Foolproof Recipe of Crispy yet Soft Gujiyas will make you ask for more!!!!

Ingredients:

1. Whole wheat flour- 1 cup

2. Desi ghee – 2 tbsp

3. Salt- 1/8 tsp

4. Lukewarm water – 1/3-1/2 cup

For stuffing

1. Khoya/Mawa – 120-150 gms

2. Almonds & Cashews chopped – 1 tbsp each

3. Raisins – 1 tbsp

4. Desiccated coconut – 2 tbsp

5. Cardomom powder- 1 tsp

6. Jaggery powder- 2 tbsp (optional)

Method:

1. Take the whole wheat flour in a bowl & add lukewarm desi ghee i.e clarified butter

2. Rub and mix the ghee with the flour, with your fingertips to form a bread crumb-like texture.

3. Add lukewarm water in parts and begin to knead. The amount of water needed will depend on the quality and texture of the flour.

4. Knead the dough till firm and tight. Cover the dough with a moist cloth and set aside for 30 minutes.

5. Crumble or grate the khoya (mawa) add Chopped nuts, raisins, and cardamom powder.

6. For making Gujiyas, divide the dough into two parts. Roll each part in your palms to make balls and place all the balls in the same bowl. Cover with a moist kitchen towel.

7. Dust the rolling board lightly with some flour. Roll each ball with the rolling pin to a small circle having 4 to 5 inches diameter.

8. Fill with Mawa stuffing & carefully, bring together both the edges, and join. Gently press the edges.

9. With a small gujiya cutter or gujiya mould, trim the extra edges. When doing this method, it is very important that the gujiya is pressed & sealed well.

10. Prepare all gujiyas this way and arrange them on a plate or tray. Cover the guijya with a moist napkin so that the dough does not dry out.

11. Preheat the oven to 200 degrees Celsius (390 degrees Fahrenheit). Brush gujiyas with milk evenly all over. Place them in a baking tray.

12. Bake the mawa gujiya for 10 to 20 minutes at 180 Celsius (390 degrees Fahrenheit), until they are golden. Oven temperatures vary, so do keep a check while baking. Place them on a wire rack for cooling. Once cooled, store them in an air-tight jar or box
