Mango is a good source of immunity boosting nutrients. It is packed with polyphenols — plant compounds that function as antioxidants.
Ingredients:
1. Ripe Mangoes – 4-5
2. Sugar or jaggery – 1/4 cup
3. Turmeric – 2 tbsp
4. Black pepper powder – According to taste
5. Rock salt – According to taste
6. Cinnamon powder – According to taste
7. Cardamom powder – According to taste
8. Dry ginger powder – According to taste
Method:
1. Peel Mango, dice them and put into blender.
2. Add Jaggery and Blend it well to make a thick paste/puree
3. Take a sauce pan & cook this mango puree with all the spices along with salt, cook till it thickens. While stirring continuously.
4. Strain it with a large strainer so that there are no bits & pieces of mangoes
5. Grease plastic trays or plates with little oil.
6. Layer the plates with mango puree up to the thickness of 1/2 inch
7. Keep it sunlight for 2 or 3 days.
8. Slice it into long strips, after it becomes dry & roll.
