Ash Gourd Halwa is a sattvic recipe & is prepared for Pujas. Ash Gourd acts as a cleanser & helps in digestion. But due to its light & cold properties it is not ideal for Kapha Types. Though it helps in detoxification of bladder.
Ingredients:
  1. Grated Ash gourd (White Pumpkin) – 1/2 cup
  2. Jaggery Powder – 1/4 Cup
  3. Cardamom Pods – 1 or 2
  4. Saffron strands – 1/8 tsp
  5. Hot water tp dissolve saffron – 1 tsp
  6. Ghee roasted cashews & almonds (optional)

 

Method:

  • In a kadhai, or sauce pan take the grated pumpkin and cook over low heat until the water evaporates and the pumpkin is dry, keep stirring.
  • Add Jaggery Powder,  the saffron mixture, increase the heat a little and cook until everything is well incorporated.
  • Add Cardamom Powder.
  • Garnish with roasted cashews & almonds(optional)

Once the halwa is ready, add 1/2 Cup Slimmed Cow Milk & cook for 2-3 minutes more to make the Kheer.
