SPLIT mung beans or Moong Chilka is easier to digest and more detoxifying. According to Ayurveda, basmati rice is balancing three doshas – Vata, Pitta and Kapha. And basmati rice is a rare gem. This humble grain is considered sattvic or pure and it balances the mind and the body. It is helpful in building body tissues.
Ingredients:
- Split yellow mung beans 1 cup uncooked
- White basmati rice – 1/4 – 1/2 cup uncooked
- Fresh grated ginger root – 1 Tbsp
- Bay leaves – 2
- Black mustard seeds, cumin, and turmeric powder – 1 tsp each
- Coriander powder, fennel, and fenugreek seeds – 1/2 tsp each
- Water – 7 – 10 cups
- Salt (rock salt/himalayan pink salt is best) – 1/2 tsp
- 1 small handful fresh chopped cilantro/ corriander leaves
- 1 pinch hing (also called asafoetida or asafetida) – Optional
Method:
- Rinse & soak mung beans & Rice separately for 2 hours & 30 minutes respectively.
- Heat a large pot on medium heat and add all the spices (except the bay leaves). Dry roast for a few minutes, stirring constantly. Dry roasting will enhance the flavor.
- Add mung beans and rice and stir again.
- Add water and bay leaves and pressure cook for 3-4 whistles.
- Turn heat to low, & keep on flame for another 5 minutes
- Add salt to taste
- Garnish with cilantro leaves just before serving
