SPLIT mung beans or Moong Chilka is easier to digest and more detoxifying. According to Ayurveda, basmati rice is balancing three doshas – Vata, Pitta and Kapha. And basmati rice is a rare gem. This humble grain is considered sattvic or pure and it balances the mind and the body. It is helpful in building body tissues.

Ingredients:

  1.  Split yellow mung beans 1 cup uncooked
  2.  White basmati rice – 1/4 – 1/2 cup uncooked
  3.  Fresh grated ginger root – 1 Tbsp
  4. Bay leaves – 2
  5. Black mustard seeds, cumin, and turmeric powder – 1 tsp each
  6. Coriander powder, fennel, and fenugreek seeds – 1/2 tsp each
  7.  Water – 7 – 10 cups
  8.  Salt (rock salt/himalayan pink salt is best) – 1/2 tsp
  9. 1 small handful fresh chopped cilantro/ corriander leaves
  10. 1 pinch hing (also called asafoetida or asafetida) – Optional

Method:

  1. Rinse & soak mung beans & Rice separately  for 2 hours & 30 minutes respectively.
  2. Heat a large pot on medium heat and add all the spices (except the bay leaves). Dry roast for a few minutes, stirring constantly. Dry roasting will enhance the flavor.
  3. Add mung beans and rice and stir again.
  4. Add water and bay leaves and pressure cook for 3-4 whistles.
  5. Turn heat to low, & keep on flame for another 5 minutes
  6. Add salt to taste
  7. Garnish with cilantro leaves just before serving
