• Ingredients: 

    •  Quinoa (preferably soaked for 15-20 minutes) – 2 tbsp
    •  Yellow Split Mung Beans (preferably soaked for 15-20 minutes) – 2 tbsp
    •  Chopped Mixed veggies – Capsicum 1 med (100 gms) +  Carrot – 1 small(50 gms) + Lauki – 250 gms
    •  Ghee -1 tsp
    •  Cumin Seeds – 1/2 tsp
    •  Coriander powder – 1  tsp
    •  Turmeric powder – 1/4 tsp
    •  Hing powder – 1/4 tsp
    •  Chopped Coriander – for garnishing
    •  Salt – to taste

    Method:

    • In a bowl add yellow moong dal and quinoa & wash it thoroughly.
    • Soak for 15-20 minutes & drain out the water used for soaking
    • First add the ghee in the cooker & add Hing and cumin seeds.
    • Now add all the veggies & Sauté.
    • Now add quinoa and mung beans, add & roast it with the above mentioned spice powders.
    • Add 1 cup water and mix them well.
    • Now, pressure cooks the khichdi till 2 whistles. After 2 whistle turn the heat to low flame.
    • After 5 minutes turn off the flame and allow the pressure cooker to cool naturally.
    • Garnish with coriander leaves.
