Ingredients:

  •  Broccoli , cut into florets – 250 gms
  • Onion – 1 small
  • Garlic cloves, finely chopped – 1 tbsp
  • Whole Almonds (Badam) – 1/4 cup
  • Salt , to taste
  • Black pepper – to taste
  • Vegetable Stock – 2 cups
  • Extra Virgin Olive Oil – 1 tbsp
  • Coriander Stalk & leaves
  • Cheese/Cream

Method:

  1. Heat oil in a pan over medium heat; add the garlic, onions, coriander stalks and sauté until the onions have softened. .
  2. Now Add broccoli florets and soaked & peeled almonds & sauté for 2 minutes.
  3. Add vegetable stock & salt, cover the pan and steam cook the broccoli in the pan for about 3 to 4 minutes.
  4. After broccoli has steamed just enough to take a bite, turn off the heat.
  5. Allow the broccoli mixture to cool.
  6. Once cooled transfer it to a mixer grinder. Blend to make a smooth puree.
  7. Once blended, pour the broccoli almond soup into a saucepan and bring it to a brisk boil and turn off the heat.
  8. Check the salt and add pepper.
  9. Garnish the Broccoli Almond Soup with coriander leaves.
  10. Garnish with cream or cheese (optional)
