Ingredients:
- Quinoa Grains (uncooked) -1/2 cup
- Water – 1 cup
- Besan – 2 tbsp
- Chopped Onion – 2 tbsp
- Chopped Carrot – 1/4 cup
- Chopped Capsicum – 1/4 cup
- Finely Shredded Spinach – 1/4 cup
- Finely Chopped Garlic – 3-4 cloves
- Salt – According to taste
- Garam Masala- to taste
- Coriander leaves – to taste
- Olive Oil (optional) – for greasing the cutlet/pattie

Method:
- Soak 1/2 cup Quinoa for 5-10 minutes & rinse well.
- Cook quinoa with 1 cup of water on low flame with lid on. Once it cooks or all the water disappears, switch off the flame & keep it aside.
- Now, In a mixing bowl, add the cooked quinoa, all the chopped veggies & spices & salt. Do not add any water.
- Mix everything properly and make Vegetable Quinoa Patty with the help of your palms.
- Heat a skillet. Once it is hot, add the Vegetable Quinoa Patty and cook it on both the sides till becomes evenly brown.
- Transfer the Vegetable Quinoa Patty into a serving platter and serve hot with Mint-Coriander-Amla chutney.
