Benefits of Ragi/Nachini/Finger Millet

Ingredients:
- Ragi poha – 1 cup
- Chopped Onion – 1/4 cup
- Finely Chopped Carrot – 1/4 cup
- Chopped Capsicum – 1/4 cup
- Green chilli – 1 -2 sliced
- Par Boiled Green peas – 1/4 cup
- Grated Ginger – 1 ½ tbsp
- Curry leaves – 1 spring
- Mustard seeds – 1 tbsp
- Mustard Oil – 1 tbsp
- Salt to taste
- Coriander leaves – for garnishing
Method:
- Wash Ragi Poha twice or thrice, don’t soak.
- Keep it in a strainer so that excess water drains out
- Heat oil in a pan, add mustard seeds & let its splutter, now add curry leaves.
- Now add onion & sauté well.
- Add ginger, carrot, capsicum, green chilli & Saute
- Add Ragi Poha & salt & mix well on medium to low flame.
- Switch off the flame.
- Sprinkle coriander leaves mix well & keep it covered for 5-10 minutes
- Serve hot with green chutney.
