Ingredients: (Serves 2)

  • Mixed vegetables (carrots, cauliflower, broccoli, tomatoes, beetroot, Lauki,) – 1 cup
  • Water  – 2 cups
  • Cow Ghee – 1/2 tbsp
  • Salt – as less as possible
  • Top up with few coriander Leaves

For Spice Mixture

  • Cumin seeds – 1/4 tsp
  • Whole pepper corns – 2
  • Cinnamon stick – 1/4 inch piece
  • Cloves – 2
  • Cardamom pods – 2

Method:

  • Peel, Wash and cut the vegetables into small bite-sized pieces.
  • Put the vegetables and water in a sauce pan or skillet. Cover and cook on medium heat until just tender.
  • Dry Roast & grind the cumin seeds, peppercorns, cinnamon stick, cardamom pods and cloves to a fine powder. (Make a large batch & store in an airtight container)
  • Add these spices in the soup & mix well.
  • Boil for 2-5 minutes.
  • Stir salt and serve hot (don’t strain)
