Ingredients: (Serving 2 cups)

  • 1 tablespoons extra-virgin olive Oil or coconut oil
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced.
  • 1 tbsp. fresh grated ginger
  •  1/2 cup coconut milk
  • 1 cup Vegetable Stock
  • 1/2 cup chopped cauliflower
  • 1/2 cup chopped Spinach leaves
  • 1/4 teaspoon turmeric powder
  • Salt to taste
  • Black pepper to taste
  • Coriander Leaves – 1/4 cup

Method:

  • In a medium saucepan melt the coconut oil.
  • Add onions, garlic and ginger and sauté until tender.
  • Add coconut milk, vegetable stock , cauliflower, spinach, turmeric, and salt & pepper and stir until well combined.
  • Cook for 10-15 minutes on high and then medium flame.
  • Add coriander leaves
