Ingredients: (Serving 2 cups)
- 1 tablespoons extra-virgin olive Oil or coconut oil
- 1/4 cup chopped onion
- 2 cloves garlic, minced.
- 1 tbsp. fresh grated ginger
- 1/2 cup coconut milk
- 1 cup Vegetable Stock
- 1/2 cup chopped cauliflower
- 1/2 cup chopped Spinach leaves
- 1/4 teaspoon turmeric powder
- Salt to taste
- Black pepper to taste
- Coriander Leaves – 1/4 cup
Method:
- In a medium saucepan melt the coconut oil.
- Add onions, garlic and ginger and sauté until tender.
- Add coconut milk, vegetable stock , cauliflower, spinach, turmeric, and salt & pepper and stir until well combined.
- Cook for 10-15 minutes on high and then medium flame.
- Add coriander leaves
