Cakes can also be made without flour and cream or butter. This Carrot tart cake is the best option for Diabetic people since its crust has been made from Oats-Almonds & is also Sugar-free. It has also been enriched with the richness of seasonal veggies as carrot & nuts paste has been used to create the filling of the tart.
Ingredients:
For Tart
1. Oats – 1 cup
2. Almonds – 1/4 cup
3. Milk – 1/4 cup
For Filling
1. Carrot – 1 cup (grated)
2. Milk – 2 cups
3. Almonds – 8-10
4. Cashews – 8-10
5. Raisins – 1/6 cup
*Tart Plate or any mould
**Pistachios for Garnishing
Method:
1. Roast & grind oats and almonds.
2. Mix well to make a crumbly mixture with the help of milk & arrange on a tart plate & refrigerate for 2 hours.
3. Grate carrots & cook with milk & dry fruits, till it becomes thick.
4. Let it cool down
5. Blend it into a fine paste
6. Fill the tart & garnish with pistachios.
7. Refrigerate for 1 hour atleast before serving.
