This Valentine special cheesecake has been made from Pearl Millet or Bajra flour. The frosting or cream cheese layer was created using coconut & cottage cheese. The heart-shaped fondants were made to decorate the cake. These were made from coconut oil & coconut milk powder & fresh beetroot juice was used to create the pink-colored heart fondants.
Ingredients:
For Base
1. Bajra Flour -1 cup
2. Jaggery powder, Coconut Powder, Sesame Seeds, Desi Ghee – 1/2 cup each
3. Baking powder and; Baking soda – 1/2 tsp each
For Frosting
1. Coconut powder -1 cup
2. Milk – 2-3 tbsp
3. Sugar -1 tbsp
4. crumbled paneer – 1/2 cup
For garnishing
1. brown sugar – 2 tbsp
2. cashews – 1/4 cup
3. pistachios – 1/8 cup

Method:
1. Sift Flour, Baking powder & baking soda in a bowl
2. Add coconut powder/Seasame seeds/other ingredients
3. In another bowl take butter & jaggery powder and mix well.(creaming)
4. Mix dry n wet ingredients into a soft dough. Don’t Knead.
5. Refrigerate the dough for 15 -20 minutes.
6. Take it out & arrange in cake mould & press it firmly.
7. Bake in a preheated oven for 25-30 minutes at 170°C
8. Take out, let it cool down.
For coconut frosting:
1. Grind Coconut in a high speed grinder by gradually adding milk.
2. When it becomes a thick paste, add paneer & sugar.

For Heart Fondants:
1. Boil coconut oil on a double boiler & mix icing sugar & milk powder to it.
2. For colour add strawberry essence or few drops of fresh beetroot juice.
3. Let it cool down & shape into desired shapes.
Assembling
1. Before taking out the crust from the mold, put coconut paste on it.
2. Spread it evenly over the crust 3. Keep it in the refrigerator for at least 1.5 to 2 hours 4. Remove it and decorate it with heart shape fondant.
