Ragi or Finger Millet is known as a wonder grain for weight loss. It is rich in calcium and has a high fiber content. It is considered to be the best aid for people suffering from diabetes. Ragi comprises a vast array of key nutrients like vitamin C, vitamin E, B-complex vitamins, iron, calcium, antioxidants, proteins, fibers.
Ingredients:
1. Ragi Flour – 1/2 cup
2. Cashew Butter – 1/4 cup
3. Jaggery Powder – 1/4 cup
4. Coconut Powder – 1/4 Cup
5. Cardamom Powder – 1/2 tsp
6. Baking Powder – 3/4 tsp
7. Salt – 1/8 tsp
8. Plant-Based Milk – 2-3 tbsp
1. Dry roast Ragi flour & let it cool down.
2. In a bowl, take cashew butter & Jaggery Powder & mix well with electric beater or hands.
3. In a separate bowl, mix all the dry ingredients well.
4. Add the dry ingredients to the butter & jaggery mixture.
5. Now add coconut powder & cardamom powder.
6. Mix everything together into dough by using plant based milk.
7. Shape into cookies & refrigerate for 30 minutes.
8. Bake in a preheated oven at 180 degree Celsius for 15-20 minutes.
9. Take out from oven, let it cool down & store in an airtight container.
