Amaranth has been shown to reduce cholesterol and blood pressure, making this a great snack for the sweet tooth of kapha constitutions. Popped is the preparation of choice for those dealing with obesity, water retention, high cholesterol, and high blood pressure thanks to its drying nature.
The seeds & nuts have been added to give extra crunch as well as to add good fats to the recipe. Since this recipe uses Jaggery Powder – don’t overindulge in this preparation during Fasting.
Ingredients – (serving-4)
- Puffed amaranth – ½ cup
- Sesame seeds – 1 tbsp
- Chopped pumpkin seeds – ½ tsp
- Chopped/slivered almonds – 4-5
- Jaggery powder – ¼ cup
- Water – 2 tbsp
- Cardamom powder, black pepper powder, cinnamon powder – to taste

Method:
- Dry roast puffed amaranth, seeds & almonds.
- Keep this aside.
- In a separate pan, add water & jaggery & cook it on low flame till it becomes thick (like chashni.)
- Mix all the ingredients in this mixture, add cardamom powder; black pepper, cinnamon powder etc & bind to make laddus.
