Ingredients

  • Onion (Chopped) – 1 small
  • Garlic Cloves (finely chopped) – 4-5
  • Sliced mushrooms – 1 cup
  • Grated Ginger – 1 tbsp
  • Chopped carrot – 1 med
  • Capsicum – 1 med
  • Boiled chickpeas –  2 tbsp
  • Cumin – 1/2 tsp
  •  Black pepper – to taste
  • Soy Sauce – 1 tsp
  • Vinegar – to taste
  • Salt to taste
  • 2 cups (470 ml) broth or water
  • 1.5 cups (375 ml) or more water
  • cornstarch to thicken in the end if needed

Method:

  1. Heat oil & add onions, garlic and ginger.
  2. Now add mushrooms and cook for 3 minutes until they get golden.
  3. Now add carrot & capsicum & cook for 2-3 minutes
  4. Time to chickpeas and spices and cook for 2 minutes.
  5. Lastly add soy sauce, vinegar, and water. Bring to boil & cook for sometime
  6. Add Salt & mix well
  7. To thicken, mix 1 tsp cornstarch in 1 tbsp water. Bring to a boil.
