For the Corn, Chickpea Cauliflower Topping:
- 2 tbsp boiled corn kernels
- 1 cup cauliflower florets
- 1/2 cup boiled green peas
- 1 tbsp ghee
- 1 tsp Italian seasoning
- other spices as per your taste
- Salt to taste
For the Creamy Base:
- 50g paneer
- 1/2 cup thick yogurt
- 4-5 garlic cloves
- ginger as per taste
- 1 tsp cumin (jeera) powder
- Salt to taste
- 1 tsp chili powder (optional)
Method:
- Sauté the cauliflower till cooked, then add the boiled green peas. Add spices, seasoning and salt. Mix well and cook for 2 more minutes.
- Make creamy base by blending paneer, yogurt, garlic, ginger, salt, and chili powder
- Make the bowl by pouring creamy base, top with the sautéed corn, cauliflower and greenpeas mixture, and garnish with chopped onion, coriander, and add lemon juice.
