For the Corn, Chickpea Cauliflower Topping:

  • 2 tbsp boiled corn kernels
  • 1 cup cauliflower florets
  • 1/2 cup boiled green peas
  • 1 tbsp ghee
  • 1 tsp Italian seasoning
  • other spices as per your taste
  • Salt to taste

For the Creamy Base:

  • 50g paneer
  • 1/2 cup thick yogurt
  • 4-5 garlic cloves
  • ginger as per taste
  • 1 tsp cumin (jeera) powder
  • Salt to taste
  • 1 tsp chili powder (optional)

Method:

  • Sauté the cauliflower till cooked, then add the boiled green peas. Add spices, seasoning and salt. Mix well and cook for 2 more minutes.
  • Make creamy base by blending paneer, yogurt, garlic, ginger, salt, and chili powder
  • Make the bowl by pouring creamy base, top with the sautéed corn, cauliflower and greenpeas mixture, and garnish with chopped onion, coriander, and add lemon juice.
