Foxtail Millet is good for Kapha Types, it nourishes the body & helps in weight loss.
Ingredients:
- Foxtail millet –1/2 cup
- Water – 1 cup
- Finely chopped onion –1 medium size
- Chopped mixed veggies, (Beans, Carrot, Peas, Capsicum etc ) – 1/2 cup
- Green Chillies (otional) – 1
- Few Coriander leaves, Chopped
- Lemon juice – 1 tsp (optional)
- Salt to taste
- Curry Leaves – 4-5
- Mustard Seeds –1/2 tsp
- Chana Dal (Bengal Gram) – 1/2 tsp
- Turmeric / Haldi powder – a pinch
Method:

Rinse the foxtail millet and soak in water for 10-15 mins . Drain water and keep aside
- Take a pan add oil, add chana dal and mustard. Let them turn golden brown and splutter
- Now add curry leaves, onion and green chilli .
- Saute & add finely chopped mixed veggies. Add some salt, turmeric and cook them covered for 3-4 mins.

Now add foxtail millet & water and let it cook covered till the water is fully absorbed. (2 whistles will be required in Pressure cooker)
- Switch off the flame & let it sit in the pan for another 5 minutes
- Add coriander & lemon before serving
