Usually Kachoris can be made with various stuffing and in this recipie we have filled it with moong daal. This is the healthiest version of Kachoris as they are baked instead. Use of Sorghum Flour & Amaranth flour will help in adding the extra dietary fibers and proteins required for your body.

For Outer Covering:
- Sorghum (jowar) Flour: 1/2 cup
- Amaranth Flour – 1/4 cup
- Arrowroot Powder – 1/4 cup
- Olive Oil – 1 tsp
- Rock Salt: 1/2: 1 tsp
- Warm Water: as required, to make soft dough For Lentil Stuffing

For Stuffing
- Moong dal (yellow) – ½ cup
- Olive Oil – 1 tsp
- Turmeric powder – 1/2 tsp
- Red chilli powder- 1/2 tsp
- Cumin powder1/2 tsp
- Dry ginger powder (saunth powder) – 1/2 tsp
- Coriander powder – 1 tsp
- Crushed fennel seeds – 1 tsp
- Dry mango powder (amchur powder) – 1 teaspoon
- Salt as required

Method:
- Put together all the ‘For Outer Covering’ ingredients in a mixing bowl, except water. Knead into a soft dough by mixing the ingredients, adding water gradually. Cover and set aside for 10 minutes.
- For Stuffing: Rinse & Soak moong lentils with enough water for 2 hours. Later drain all the water and add the soaked moong lentils in a grinder jar. Grind to a roughly coarse mixture.
- Heat a pan, add 1 tsp olive oil, add all the spice one by one except amchoor powder & salt.
- Now add the coarsely ground moong dal. Also add salt and a pinch of asafoetida. Roast it for some time
- Roast it till the raw smell goes away, switch off the flame, add amchoor & let the mixture cool down.
- For assembling: Take the dough and divide into 6-8 equal-sized balls, depending upon preferred size. Stuff the balls with the moong daal filling and seal well (if required, use little water)
- Preheat the oven at 180℃ for 10 minutes.
- Bake the stuffed balls at 180℃ for 20-25 minutes.
- To make in an air-fryer: Preheat the Airfryer for 10 minutes at 200℃. Air Fry the Kachoris for 15-20 minutes at 200℃.
- Serve these kachoris with tamarind chutney and/or green chutney.
