Green Mung bean soup is good for Pitta & Kapha Body Types & balances high sugar level & Lowers the high cholesterol levels.

INGREDIENTS

  1. Green Mung beans (green gram) – 1/2 cup
  2.  Water – 3 cups
  3.  Cow Ghee – 1 tablespoon
  4. Turmeric – 1/2 teaspoon
  5. Garlic pods – 2
  6. Asafetida (hing) , a pinch
  7. Peppercorns , crushed – 6 Whole Black 
  8.  Lemon juice – 1 teaspoon
  9. Cumin seeds -1 teaspoon
  10. Curry Leaf – 5

 

GUIDE / INSTRUCTIONS

  1. Wash & soak green moong beans for 4-5 hours or overnight & then drain.
  2. Add it to pressure cooker and cook for 3 whistles. Once done, mash it or puree with hand blender or mixer adding a cup of water.
  3. Heat ghee in a pan, add the finely chopped garlic and cook until it turns brown. Sauté the curry leaves for a few seconds. add cumin seeds, turmeric. Once the cumin seeds sizzles, add asafetida and saute for a minute.
  4. Now add salt, crushed pepper & lemon juice
  5. Serve hot, garnished with freshly chopped coriander.

 

Dosha Tip: Mung beans are better for persons with Pitta and Kapha body types. It is not detrimental to a Vata person, however if you are a Vata person, it is best to consume it in moderation. It’s because mung beans have a dry, light character that can be problematic for people who have a Vata dosha dominance.
