This is a disguised nutrition recipe especially created for Kids. As kids are fussy eaters & they do not like to have vegetables especially green leafy vegetable that is loaded with vitamins & minerals. This recipe contains- Spinach that is rich in high amounts of carotenoids, vitamin C, vitamin K, folic acid, iron, and calcium, Broccoli that is a great source of vitamins K and C, a good source of folate (folic acid) and also provides potassium, fiber. Vitamin C, and Green peas  that are a good source of dietary fiber, Vitamin A, iron, folate, thiamin, Vitamin C and manganese.

 Ingredients:

For cups

  1. Spinach – 1 cup shredded
  2. Broccoli – 1 small
  3. Green peas – 1/2 bowl
  4. Boiled potatoes – 2 medium
  5. Roasted Chickpea Flour or Roasted Besan – 2-3 tbsp
  6. Corn flour – 1 tbsp
  7. Ginger, coriander leaves, salt, jeera powder, chaat masala, salt – according to taste

For filling

  1. Onion – 1 cup finely chopped
  2. Capsicum – 1/2 cup finely chopped
  3. Zucchini – 1/2 cup finely chopped
  4. Cheese (any)/ or fresh cream (malai) – According to taste
  5. Oregano – According to taste
  6. Salt – According to taste

Method:

  1. Boil spinach, broccoli and green peas and mash them along with potatoes.
  2. Mix chickpea flour and all other ingredients to make the small cups.
  3. In a separate bowl, mix onions, capsicum, zucchini, cheese/malai, salt and oregano.
  4. Fill the cups with this mixture and bake at 180 degree for 15-20 minutes
  5. Alternatively they can also be air fried at 180 degree for 15-20 minutes.
  6. Sprinkle oregano & other herbs before serving.
