Ingredients
- 1 cup Horse Gram Dal (Kollu/ Kulith) , soaked for 4 hours
- 1/2 cup chopped seasonal veggies (Cabbage, Cauliflower, Capsicum, Carrot etc)
- 1 Onion , finely chopped
- 2 sprigs of Coriander, finely chopped
- 3 cloves Garlic , finely chopped
- 1/2 inch ginger grated
- 1 chopped green chilli
- 1 teaspoon Cumin
- 1 Bay leaf (tej patta)
- 1/2 teaspoon Black pepper powder , adjustable
- 1/2 tsp cow ghee
- Salt , to taste
Method
- Drain the water from the soaked horsegram.
- Place the soaked horse gram in the pressure cooker, along with 2 cups of water for 5-6 whistles.
- Turn the heat to low and simmer the horse gram for 10 to 15 minutes. After 10 to 15 minutes turn off the heat. Allow the pressure to release naturally.
- Meanwhile, in heavy-bottomed pan on medium heat, add green chillies, ground cumin, bay leaf, black pepper. Now.add minced garlic, the onions, ginger and mixed veggies & stir-fry until these are tender.
- Now add the cooked horse gram lentils along with 2 tablespoons of reserved water.
- Once it comes to a brisk boil, cover the pan, turn the heat to low and simmer for about 5 minutes and turn off the heat.
- Add coriander leaves & serve
