Ingredients

  1. 1 cup Horse Gram Dal (Kollu/ Kulith) , soaked for 4 hours
  2. 1/2 cup chopped seasonal veggies (Cabbage, Cauliflower, Capsicum, Carrot etc)
  3. Onion , finely chopped
  4. 2 sprigs of Coriander, finely chopped
  5. 3 cloves Garlic , finely chopped
  6. 1/2 inch ginger grated
  7. 1 chopped green chilli
  8. 1 teaspoon Cumin 
  9. Bay leaf (tej patta)
  10. 1/2 teaspoon Black pepper powder , adjustable
  11. 1/2 tsp cow ghee
  12. Salt , to taste

Method

  • Drain the water from the soaked horsegram.
  • Place the soaked horse gram in the pressure cooker, along with 2 cups of water for 5-6 whistles.
  • Turn the heat to low and simmer the horse gram for 10 to 15 minutes. After 10 to 15 minutes turn off the heat. Allow the pressure to release naturally.
  • Meanwhile, in heavy-bottomed pan on medium heat, add green chillies, ground cumin, bay leaf, black pepper. Now.add minced garlic, the onions, ginger and mixed veggies & stir-fry until these are tender.
  • Now add the cooked horse gram lentils along with 2 tablespoons of reserved water.
  • Once it comes to a brisk boil, cover the pan, turn the heat to low and simmer for about 5 minutes and turn off the heat.
  • Add coriander leaves & serve
