Ingredients:
- Bottle gourd/lauki – 1 med
- Desi Ghee – 1 tsp
- Green chilli – 1 (optional)
- Water – 1.5 cups
- Salt and black pepper – to taste
- Coriander leaves – Garnishing
Method:
- Add desi ghee in a pan and place it on medium heat.
- Once the ghee is hot add the hing, cumin seeds and green chilli, and saute
- Add diced bottle-gourd, water or vegetable stock, and salt.
- Cover with a lid then cook for 5 minutes.
- Once cooked, Let it cool down for 5-10 minutes, and puree in a blender.
- Add salt and crushed black pepper for seasoning.
- If soup is too thick, add some water or vegetable stock and boil for 2 minutes.
- Bottle gourd soup is ready to serve. Garnish with coriander leaves.
