Ingredients:

  • Bottle gourd/lauki – 1 med
  • Desi Ghee – 1 tsp
  • Green chilli – 1 (optional)
  • Water – 1.5 cups
  • Salt and black pepper – to taste
  • Coriander leaves – Garnishing

Method:

  • Add desi ghee in a pan and place it on medium heat.
  • Once the ghee is hot add the hing, cumin seeds and green chilli, and saute
  • Add diced bottle-gourd, water or vegetable stock, and salt.
  • Cover with a lid then cook for 5 minutes.
  • Once cooked, Let it cool down for 5-10 minutes, and puree in a blender.
  • Add salt and crushed black pepper for seasoning.
  • If soup is too thick, add some water or vegetable stock and boil for 2 minutes.
  • Bottle gourd soup is ready to serve. Garnish with coriander leaves.
