Rich in fiber & antioxidants millets are good for diabetic people as they have low GI. Its alkaline forming nature reduces the acid content in the body & also balances PH levels. Good for KAPHA Types but shall be used in moderation for VATA & PITTA.
Ingredients:
- Little millet – (1 ½ cups)
- Green Split Dal -1/2 cup)
- Fenugreek Seeds – ½ tsp
- Poha or flattened rice – 50 gm (½ cup) (This has been added for softness & can be skipped while making dosa only)
- Salt -1 tsp
Method:
- Wash & soak the millet and dal together along with the Fenugreek seeds with enough water to cover them for 4 to 6 hours or overnight.
- In a separate container soak the flattened rice for 1 hour.
- Then drain the excess water and grind everything together to get a smooth paste.
- Transfer to a bowl, add salt and mix.
- Cover the bowl and allow it to ferment for 6-8 hours.
- Mix well & use IDLI moulds or make Dosa from this batter.
