Ingredients:
For Dressing
- Extra Virgin Olive Oil – 4 tbsp
- Lemon Juice – 2 tbsp
- Minced Garlic – 1 tbsp
- Salt & Pepper to taste
Other
- Quinoa – 2 tbsp
- Onion, Tomato, Cucumber
- Avocado (optional)
- Boiled Chickpeas/Boiled Peanuts – 2 tbsp
Method:
- Wash & rinse quinoa & boil until cooked.
- Drain Out the excess water.
- Mix all the ingredients under dressing & mix
- Mix everything together including dressing.
