Ingredients:

For Dressing

  • Extra Virgin Olive Oil – 4 tbsp
  • Lemon Juice – 2 tbsp
  • Minced Garlic – 1 tbsp
  • Salt & Pepper to taste

Other

  • Quinoa – 2 tbsp
  • Onion, Tomato, Cucumber
  • Avocado (optional)
  • Boiled Chickpeas/Boiled Peanuts – 2 tbsp

Method:

  1. Wash & rinse quinoa & boil until cooked.
  2. Drain Out the excess water.
  3. Mix all the ingredients under dressing & mix
  4. Mix everything together including dressing.
