Let’s See today how to make Vegan Ragi Waffles with Vegan Icecream, a perfect nutritious & wholesome food for the whole family.
Ingredients:
1. Make Coconut Butter by grinding the desiccated coconut powder in a high speed blender.
2. Grind at intervals for 20-30 seconds twice or thrice.
3. Then add coconut oil or any other vegetable oil & blend two more times to get a smooth paste.
4. Now take a riped banana, peel it & mash it.
5. Add 2 tbsp coconut butter to it & mix well.
6. Now add ¼ cup jaggery powder & mix everything really well to get a smooth paste.
7. Now add Ragi Flour, Baking Powder, Cocoa Powder & make a dropping consistency paste by adding mil in badges.
8. Pour the batter in Waffle mould & bake for 15-20 at 180 degree celsius (preheated at 180 degree for 10 minutes)
9. Demould the waffles from the mould after it cools down.
10. For making Vegan Icecream/Topping, Blend mango cubes with 2 tbsp coconut butter.
11. Refrigerate for 30 minutes (no need to freeze) & serve
