Ingredients:

  1. Sweet Potato (Shakarkandi) – 2 med sized
  2. Grated Blanched Lauki – 1/2 cup
  3. Ginger Paste – 1 tsp
  4. Amaranth Flour – 2 tbsp
  5. Green Chilli
  6. Chaat masala, Cumin powder, Chilli powder. Garam masala, Dried Mango Powder – According to taste
  7. Salt – to taste
  8. Coriander leaves – to taste
  9. Ghee – for shallow frying/Roasting
Method: 
  • Rinse the sweet potatoes thoroughly & pressure cook with enough water and salt till they become soft.
  • Drain the water, let them cool and peel.
  • With a potato masher, mash the sweet potatoes well.
  • Squeeze out all the water from the lauki
  • Add all the ingredients except oil. Mix well.
  • Shape into medium sized cutlet, tikkis or patties.
  • Pan fry the patties with oil till both the sides are well browned.
  • Garnish with some coriander leaves.
  • Serve Sweet Potato Cutlet with a chutney.
