This Yellow Mung Lentil & Spinach Soup is the best option for dinner and is easily digestible. The high fiber content in mung beans aids in cholesterol reduction and lowers blood sugar levels. Plus, mung beans are a mild diuretic which helps to reduce excess water weight.
Ingredients:
- Cooked(Steamed) Yellow split mung beans – 1/2 cup
- Chopped spinach – 1/4 cup
- Cow Ghee – 1/4 tsp
- Diced carrots – 1/4 cup
- Chopped Onions – 1/4 Cup
- Minced Garlic Cloves – 1
- Grated/Minced Ginger – 1/2 tsp
- Salt – to taste
- Chopped Coriander Leaves – For Garnishing
- Spices – Cumin Seeds, Crushed Black Pepper, Asafetida(Hing), Garam Masala powder, Fennel Seed powder, Lemon Juice
- Water – 1 cup
Method:
- In a Saucepan add cow ghee, Hing & Cumin Seeds.
- Add garlic, ginger, onion & carrots. Sauté for 5-10 minutes.
- Now, add the spinach and water to the mixture. Sauté for few more minutes.
- Now add the mung beans and simmer until everything is well incorporated, blend to a soup like consistency.
- Add Salt, Black pepper powder, garam masala powder, fennel seeds powder & garnish with chopped Coriander leaves.
- Also add few drops of lemon juice (optional)
